arrow 1. 7 large potatoes, peeled and chopped
2. 3 cloves garlic, minced 3/4 cup extra virgin olive oil
3. 1/2 cup GOOD white wine vinegar
4. 1/3 cup chopped fresh parsley

 Cooking Instructions arrow 1. Bring a large pot of salted water to the boil. Add potatoes and cook until tender but still firm, about 15 minutes. Do not allow them to get too soft. Drain, cool and chop into cubes.
2. In a large bowl, whisk together the garlic, olive oil, vinegar and parsley. Add potatoes and toss to coat.

Cover and refrigerate overnight
