arrow 1. 1 double pack plain Sponge Cake from Woolworths
2. 1 carton of 300 ml Paul’s pure full cream
3. 2 tablespoons of icing sugar
4. I tablespoon of vanilla essence
5. 1 Mocha pot of good Italian caffe
6. Lemon rind (grated)
7. 2 pieces of good Lindt dark chocolate
8. Tia Maria (2 large spoons)

 Cooking Instructions arrow 1. Have everything ready, grated & in place before you start
2. Mix full cream with 1 tablespoon of Vanilla essence + 2 heaped table spoons of icing sugar until cream forms and is solid.
3. Mix caffe` + Tia Maria together in separate bowl
4. Carefully slice the first sponge in half to cover bottom of shallow Pyrex bowl of similar
5. With a soft pastry brush dampen sponge with caffe` + Tia Maria mixture
6. Add a layer of cream then grated chocolate then some grated lemon (not too much)
7. Now another layer of sponge & repeat the procedure of dampening with caffe, cream, chocolate & lemon rind
8. Pour over some extra caffe if too dry

 Serving Suggestions arrow 1. Serve with sweet Italian wine or Riccadonna Champagne or with Coffee for dessert
2. Cover well in fridge with gladwrap + alfoil
3. Is good even after 2 days!
